Mmm Wednesdays – OOPS I’m late!

Oh dear, I’ve lost a whole day this week!! Sorry, friends. In our last post for October, I have just one more pumpkin recipe to share. This one is for pumpkin bars which my friend Debbie made for our neighborhood bunco game last week, and let me tell you, they are SCRUMPTIOUS! Usually, a layered treat like this takes forever because you have to cool between layers, but not necessary for this recipe.

Debbie’s Pumpkin Bars

1 cup flour
½ cup rolled oats
½ cup brown sugar
½ cup butter

Cut butter into combined flour, oats and brown sugar until mixture is crumbly. Pour crumbs into 13 x 9” pan and press until an even crust is formed. Bake at 350 for 15 minutes. While crust is baking, mix together in a large mixing bowl the following ingredients:

1 – 16 oz. can pumpkin
1 – 12 oz. can evaporated milk
2 eggs
¾ cup sugar
½ tsp. salt
1 tsp. cinnamon
½ tsp. ginger
¼ tsp. cloves

When crust is finished baking, pour pumpkin mixture over crust. Return to oven and bake for 20 more minutes. While pumpkin mixture is baking, mix together the following ingredients:

½ cup brown sugar
½ cup chopped pecans
2 Tbs. soft butter

When pumpkin mixture is done baking for the 20 minutes, sprinkle nut mixture on top of half-baked pumpkin. Return to oven 15-20 minutes more.

Cool, cut into squares.

Serve with a dollop of whipped cream if desired but delicious plain.
