Weigh me Wednesday (Two Weeks Left…Can You Believe it?)

Can you believe I only have 2 weeks left?  Oh my goodness!  I can’t!  I am dilated 3 cm, so we are making progress, but too bad it is taking longer than hoped.  I FINALLY gained 1 lb. within the past 6 weeks.  Don’t get me wrong- I am not complaining that’s for sure!  I am surprised how much I slowed down since I was gaining so quickly previously.  Are you ready to start losing the weight again if you aren’t?  I am ready to help keep you motivated as well as keep myself motivated.  It may take me a little to get into the swing of things with breastfeeding though as I’m always scared of losing my milk.  So, my favorite dessert is cheesecake.  Here is a great Weight Watchers cheesecake recipe.

Cheesecake

Ingredients:
8 oz Cool Whip Free
8 oz 1/3 less fat Philadelphia Cream Cheese
9 inch reduced fat Graham Cracker Crust
1/4 cup sugar
1 tsp lemon juice

Directions:
In a large bowl, whip cream cheese, lemon and sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm. Cut into 8 equal slices. Or serve just the cheesecake as a mousse, without the pie crust, for only a 4 Point Total!
