My kids head back to school next week and I’m excited to get back into a routine. I’ve got two girls in soccer and my son is playing football so most nights we have sports practices. That means dinners need to be quick and easy! Jennie-O sent me this Sun Dried Tomato Turkey breast and since we don’t have a meat slicer to slice it deli-style, I came up with a couple of other ways to enjoy it.
First I cut it into slices and we just ate at as our protein for the night along with pasta and veggies, and grapes. It was a simple dinner that the whole family could enjoy. Of course, I still had a lot left over so I decided to make a pasta salad that we could eat for lunches or as a side with dinner or even as the main meal!
I cubed up some of the turkey, boiled some pasta then addd some bacon and olives. To keep things easy, I used a bottle of ranch dressing instead of making my own dressing. The flavors went well together and the ingredients use were all on my family’s “will eat” list. I’ve got a house full of picky eaters so this is a pretty big deal!
I love the versatility of this Jennie-O turkey. The options are practically endless! Since it’s already cooked all you have to do is figure out how you want to slice it and whether you want to use it as an ingredient in a recipe or enjoy it as the main course.
