Before today, I had never tried silicone products for baking. Boy, have I been missing out! I seriously love these [amazon_link id=”B00F6FIJO8″ target=”_blank” ]Little Gems Silicone Baking Cups from Sunsella[/amazon_link]! I tested them out using my favorite Banana Chocolate Chip Muffin recipe since I had some over-ripe bananas I needed to use up. In the past I’ve either used paper baking cups or baked them directly in the muffin tin. The muffins stick to the paper really bad but I don’t like not using a wrapper. I was amazed how awesome these silicone baking cups worked.
I set the baking cups out on a cookie sheet, made up my batter and filled them up. They baked evenly and came out looking great:
But the real test was how easily they’d come out. All I can say is wow. Check this out:
They came out without any effort and left very little muffin behind, just a tiny bit on the bottom of the cup. Amazing. I will definitely be purchasing a second set of these since most of my recipes make 2 dozen and these are sold in a set of 12. I love the bright rainbow colors — you get 2 each of 6 bold hues.

I bought some in the Target $ section years ago and still love them. They probably aren’t quite as fancy as these ones, but I really do like them. I still spray them a little though just to make sure they come out cleanly.
Also, if I have bananas that are ripe, I put them in a ziplock, mash it up, write on the bag how many bananas are in there, and freeze it. It’s easy to thaw and use whenever I have enough to do a double batch of my banana bread/muffin recipe. =)
