It took me awhile but I finally got on the Instant Pot bandwagon and I haven’t looked back. As a very busy family I need all the help I can get to get dinners on the table QUICK and the Instant Pot has not disappointed! Most meals in our rotation are made in the Instant Pot. I love it because I can get dinner going then clean up the house or get my kids ready for practice while dinner is cooking. After dinner there’s just one pot to wash! The dinner dishes go into the dishwasher and we’re off!
I don’t use cookbooks very often because most only contain one or two recipes I’ll actually use. I’ll write those down then get rid of the book so it doesn’t clutter up my pantry. I recently received a copy of The Big Book of Instant Pot Recipes: 240 Must-Try Dishes for Your Multi-Function Cooker by Kristy Bernardo, Emily Sunwell-Vidaurri, Amy Rains, and Stefanie Bundalo. Now this is a book I know will get used! I’ve already booked marked several recipes!
The book contains 240 recipes for every occasion that the authors have adapted for the Instant Pot. Most of them take less than 45 minutes. Once you get the hang of using a pressure cooker, it’s really easy. It makes family meal time fast and simple. This cookbook has something for everyone whether you are gluten-free, Paleo or just want whole food recipes. It covers breakfast, lunch, soups and stews, pastas, mains, sides, desserts and condiments & sauces.
One thing I always look for in a cookbook is photos. This book has beautiful photos of every single dish so you can see what the finished product looks like. My oldest daughter LOVES cookbooks so she helps me pick out which meals to try. If it doesn’t have a picture she won’t even consider it. A few that caught our eye include:

These are just a FEW of the recipes we can’t wait to try. I’m super excited to have so many new options to try for back to school when our schedules get super busy again. Did you know that pressure cooking can cut traditional cook times by up to 70%? That’s just one reason to try pressure cooking in an Instapot!
