Our family is big on chicken. I sent my hubby to Fred Meyer and he picked up the Foster Farms Simply Raised Breast Fillets and asked me to make his favorite Chicken Parmesan meal. Boneless skinless chicken is our favorite and we were pretty impressed that we didn’t have to worry about these fillets containing added hormones, steroids or antibiotics. This chicken is 100% vegetarian fed and always fresh and 100% natural.
I gathered my ingredients and went to work preparing dinner. The chicken breasts were HUGE but looked really good! They come 3 to a package. I knew they’d be too big for our kids and they were a bit thick so I used the flat side of a meat tenderizer mallet and some parchment paper to pound them out thinner.I cut all but one breast into strips for my kids.
Next, I coated the chicken in flour, dipped into beaten egg mixture and then coated the chicken in Italian seasoned breadcrumbs mixed with olive oil
I cooked it in our air fryer which makes the chicken perfectly crisp and tender at the same time. Meanwhile I heated some tomato sauce and cooked some spaghetti noodles. I tossed a Caesar salad and heated some breadsticks too.
I had a delicious meal on the table in less than an hour. This is one of the dinners that I cook that always makes me feel like I succeeded. I might use sauce from a jar and salad from a bag but it still feels like a good home cooked meal to me! The chicken was awesome so I’m excited that the Organic line will be in grocery stores this fall.
