Ingredients:
2 lbs boneless chicken breasts, cut into bite size chunks (I use 2 breasts)
1-2 Tbs olive oil
1 clove garlic, crushed (or jarred equivelant)
1/4 tsp. ginger
3/4 tsp red pepper flakes (omit if you don’t care for spicy foods)
1/4 cup apple juice
1/3 cup light brown sugar
2 Tbs ketchup
1 Tbs cider vinegar
1/2 cup water
1/3 cup soy sauce
Directions:
Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove chicken. Add remaining ingredients, heating over medium heat until well mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes. If you prefer a thicker sauce try adding a little bit of corn startch mixed with water. This will help thicken the sauce.
I like to add some frozen stir fry veggies near the end of cooking and serve over brown rice.
