When I first saw cupcake cake bites on Bakerella I knew I had to try them. My daughter’s first birthday party was the perfect opportunity since I had decided on a cupcake theme. Here’s what you’ll need to make cupcake bites:
1 boxed cake mix, any flavor (red velvet works well) (+ eggs, water, oil to prepare)
1 can of cream cheese frosting
Chocolate candy melts in brown + at least one other color for the “frosting”
Candy mold
Wax paper
Red M&Ms
Sprinkles
Directions:
Start by baking your cake according to the directions on the box in a 9 x 13 pan.
Once it has baked and cooled completely, crumble the whole thing up into a large bowl and add the can of frosting. Mix with the back side of a spoon. You can also do it with your hands and it’s easier but messy.
Before the chocolate sets, place the cake mixture ball in the middle until the chocolate squishes up to the top edge. Put them in the freezer for a few minutes to set. Then carefully pop them out of the tray.
These make a really cute party favor, especially when packaged in a cellophane bag and tied with a ribbon or in a mini cake box. One recipe will make around 50 cupcake bites.
