A few weeks ago the weekly topic was “What Food Network item could you not live without?” My question is, do I have to pick just one?? As pictured above, I really love the Magnetic Measuring Spoons Set, Mini Muffin Pan and Carousel Stripe Kitchen Towels. The muffin tin is really versatile (and who can resist anything mini?!). The magnetic measuring spoons are genius — I hate having my spoons clipped together with a ring but like them to stay together in the drawer. Magnets easily solve this problem, plus these spoons are double ended with round and oblong spoons so you can pick what you like depending on the job! Last but not least, I love the style and color of the generously sized kitchen towels from Food Network.
1/3 cup shortening (I use applesauce instead- works great!)
1/2 cup sugar
2 eggs
1 3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup mashed ripe banana
1/2 cup mini chocolate chips
Preheat oven to 350 degrees. Cream together shortening (or applesauce) and sugar. Add eggs. Beat well.
Sift together dry ingredients. Add to creamed mixture alternately with bananas blending well after each addition. Spoon into paper lined mini muffin tin. Sprinkle tops with mini chocolate chips. Bake for 12-14 minutes or until a tooth pick stuck in the middle comes out clean. Remove from pan and cool on rack.
