Rachel, a friend of mine and occasional contributer wanted to share this recipe she recently discovered. Here’s what she had to say:
I was walking through the office a couple of weeks ago when I co-workers lunch caught my eye – it was called Taco Soup, and I immediately begged for the recipe. It’s easy, fast, inexpensive, and healthy – plus, it’s delicious. My daughter was asking to “taste it again” the whole time it was cooking!
Ingredients:
1 lb. Ground Turkey (you can use beef if you want)
1 med. onion
1 can Tomato Sauce
1 can Diced Tomatoes
1 can Chili Beans
1 cup frozen corn
1 pkg Taco Seasoning (or to taste)
Just brown the meat with the diced onion, add everything else and simmer for 30 minutes! I added Cannelloni and Kidney Beans too because I like them and they are healthy. Enjoy!

I have a version of Taco Soup that is very similar but uses a packet of ranch dressing, picante sauce and pinto beans.
