This is one of our favorite recipes. It’s a great side dish for potlucks or family gatherings.
PARTY POTATOES
2 lbs. frozen hash browns, thawed
1/4 c. butter
1/4 c. diced onions (I leave these out as I don’t care for onions)
1/2 c. shredded cheddar cheese
16 oz. sour cream
1 can cream of chicken soup
CRUMBS:
2 c. crushed ritz cracker
2 tbsp. butter, softened
DIRECTIONS:
Mix together hash browns, butter, onions, cheese, sour cream, and soup. Put in 9″x13″ pan. Bake at 350 degrees for 45 minutes. Combine corn flakes and softened butter. Add crumb mixture on top. Bake another 10 to 15 minutes.
