My nephew’s first birthday party was on Saturday. He did an awesome job on his cake. I wish I had the pictures to prove it. Instead I will share one from my son’s first birthday which was almost a year ago. He hated his cake.
Look how clean he is! That tiny bit of frosting on his face is only there because I tried to make him take a bite which just made him scream. I can assure you he will eat his cake this year as he did pretty well on the giant slice he was served at his cousin’s birthday party.
Anyways, my sister in law made a really unique and delicious birthday dinner and I wanted to share it you. So without further ado- Hawaiian Haystacks!
Ingredients:
white rice
cooked chicken
1 can cream of chicken soup
sour cream
milk
pineapple (they grilled fresh pineapple and it was delicious)
slivered almonds
peas
mandarin oranges
sliced mushrooms
crunchy chinese noodles
coconut (shredded)
shredded cheese
Directions:
Heat cream of chicken soup with one can of milk and one cup or so of sour cream. Add cooked chicken. Prepare rice according to package directions. To serve, top rice with soup sauce and top with your favorite ingredients! I was a little wary of the coconut at first but I’m sold! I’ll be adding this to our dinner rotation for sure. Thanks Shauna!
Side note: All ingredients and amounts can be adjusted to your taste or amount of people you are serving- that’s why I didn’t really give measurements. Let us know if you try this one and how you like it!

Instead of water in the sauce use milk! Just thought I’d clarify. 🙂
