Got some over-ripe bananas? Make banana bread!
1/3 cup shortening (I use applesauce instead- works great!)
1/2 cup sugar
2 eggs
1 3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup mashed ripe banana
1/2 cup chopped walnuts (optional)
Preheat ove to 350 degrees. Cream together shortening (or applesauce) and sugar. Add eggs. Beat well.
Sift together dry ingredients. Add to creamed mixture alternately with bananas blending well after each addition. Pour into well greased bread pan. Bake for 45-50 minutes or until a tooth pick stuck in the middle comes out clean. Remove from pan and cool on rack.
I like to double this recipe and make two loaves because it’s so good!
