Aside from tacos, beef stroganoff and spaghetti &meatballs, our family rarely eats anything besides chicken, at least at home. I’m pretty picky when it comes to the chicken I cook too. Costco’s boneless skinless frozen chicken tenders are a staple in our house. Occasionally we buy the boneless skinless chicken breasts too but I prefer to work with the small pieces. About a year ago I was introduced to Zaycon foods. They sell fresh chicken in bulk. Bulk meaning 40 pound boxes. That is a LOT of chicken. They gave me 40 pounds for free. It was awesome. What was not so awesome was that I received it a few days PAST my due date with my third baby. I was not in the frame of mind to deal with it. Luckily my mom came to the rescue and helped me separate it, cut it up, marinade some, cook some and freeze a lot. I love chicken because it’s so versatile. It’s great for barbecuing, broiling, in salads, in pasta, marinaded, seasoned, in different sauces, chicken chili, chicken tacos…the list goes on and on. I’ve got quite a few chicken recipes that my family loves but there are always new ones to try. My husband and I love this recipe for Cream Cheese Chicken:
4-8 cloves garlic (or jarred equivalent)
red pepper flakes (can be left out if you aren’t a fan of spicy foods)
4 oz cream cheese
1.5 Tbs. flour
2 tsp white wine
We like this over chicken and white rice. It’s also good for a white garlic chicken pizza!
