I posted this last week but it was along with another post. I seriously cannot keep these in my house they are that good. I wanted to share it again in case you missed. We all love these muffins and they get eaten up very quickly. So quickly, in fact, that I don’t even have a picture! Here’s the recipe:
Pumpkin Chocolate Chip Muffins
4 eggs
2 cups sugar
1 Can (16 oz) pureed pumpkin
1 1/2 cups oil
3 cups flour
2 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
1 package chocolate chips
Directions:
In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth. Add in dry ingredients and mix well. Fold in chocolate chips. Using a 1/4 cup measuring cup, scoop up and drop batter into greased or paper-lined muffin cups (so they are about 3/4 full). Bake at 400 degrees for 16 to 20 minutes or until a toothpick stuck in the center of a muffin comes out clean. Makes about 30 muffins.
