Cheese. I love cheese. Everything is better with cheese — that’s my motto and I stand by it. Also, there’s no such thing as too much cheese. We always have cheese in the fridge at our house. We typically stick with cheddar and string cheese but sometimes we venture out to try other varieties. Lately my husband and I have taken to a light night cheese and crackers snack and it’s really fun having a variety of different cheeses to snack on. Arla Dofino cheeses are free of added hormones and crafted with quality ingredients in an environmentally friendly way in Wisconsin. They’ve got a delicious selection of cheese to choose from:

Cheese is a great way to incorporate calcium and protein into your family’s diets. My kids love having what the like to call “Picnic” for lunch. Basically it’s just a bunch of finger foods including cheese, crackers, fruit and cold cuts. I’ll admit, this is one of my favorite lunches too! Another kid favorite in our family is grilled cheese. It’s great to mix it up with a variety of different cheese from Arla Dofino.
The Naptime Chef, Kelsey Banfield, has several tasty recipes including an open-faced caprese tartine & kid-friendly lunchbox turkey and cheese roll-ups.
From The Naptime Chef, Kelsey Banfield Open-Faced Caprese Tartine
Ingredients:
2 cups halved cherry tomatoes
8 large basil leaves, torn
1 pinch kosher salt
1-tablespoon extra-virgin olive oil
4 large slices country bread
8 slices Arla Dofino Creamy Havarti cheese
1. In a large bowl, combine the tomatoes, basil, salt and olive oil. Set aside.
2. Preheat the oven to 350 degrees. Place the bread on a baking sheet and bake for about 10 minutes, or until just dried out, but not browned.
3. Remove the bread from the oven and allow to cool for three minutes, or until comfortable to handle.
4. Layer two slices of cheese on each slice of bread. Then, top each slice of bread with even amounts of the tomato mixture. Return the baking sheet to the oven and bake for 5 to 8 minutes, or until cheese is just melted, but not browned. Remove the bread from the oven and transfer it to plate. Serve when just cool enough to handle.
I seriously can’t decide which Arla Dofino cheese is my favorite and I’ve tried quite a few. The Havarti with Jalapeno and Gouda with Chili Lime are really good and surprisingly kid-friendly. I thought they’d be really spicy but instead they were flavorful but without too much heat. The Creamy Havarti is a favorite rolled up in a tortilla with roast beef from the deli.
