Someone asked me the other day if we had any Valentine’s Day traditions with our kids. While we don’t really have anything specific, I do usually get them a small gift and I always like to start their day with love with a fun and delicious breakfast. National Pancake Day is coming up on February 17th and since my kiddos LOVE pancakes I figured why not pre-funk with a special Valentine pancake breakfast.
To make great pancakes you need 2 things: A great pan and a good pancake mix likeHungry Jack. Good syrup doesn’t hurt either. I am totally digging my new T-fal OptiCook fry pan. T-Fal is the #1 cookware brand in the US and the inventor of the non-stick pan (how did we ever live without this feature?) They know their stuff and this OptiCook fry pan is proof. It has quickly become my favorite pan!
I’m not a morning person, and honestly, I’m not much of a breakfast person either. That’s why I love Hungry Jack pancake mix. I can make fluffy and delicious pancakes with one eye open. You only have have to add water and give it a quick stir. Easy-peasy! The pancakes come out perfectly every time.
To make it special, I made coconut syrup the night before (not a morning person, remember?) then made mini pancakes and stacked them with strawberries and bananas held together with a toothpick. I tinted the syrup pink with some food coloring for dipping —viola! A yummy and fun start to Valentine’s Day, National Pancake Day or ANY day!
