I’ll be honest. I’m a sweets in the morning type person. Ok, ok..I said I’d be honest. I’m a sweets ANY time of day person but I especially love things like PIE for breakfast. As to not corrupt my children (and to keep my hubby from calling me out on my bad influence) I hide from my children when I indulge in sweets for breakfast.
Since we feed our children healthy breakfasts on most days, my husband and I agreed that the occasional sweet breakfast would be okay once per week or so. Even sugary cereals are packed with vitamins so I can justify this. We’ve just added a new treat to our breakfast menu. Aunt Jemima just introduced new Frozen Confetti Pancakes. These homestyle pancakes feature colorful rainbow sprinkles that make them super fun to eat. Not only that, they are a good source of 6 vitamins and minerals and contain no preservatives. In addition, you can have breakfast on the table in ONE MINUTE! Just pop these puppies into the microwave or toaster and they are ready in a flash.
I think it goes without saying that my kids loved these. Who wouldn’t?!
Aunt Jemima provided us with this fun recipe for Confetti Birthday Pancakes (I say skip the candle and enjoy them ANY day!):
Ingredients:
• 3 Aunt Jemima Frozen Confetti Pancakes
• 1 sliced orange
• 1 sliced strawberry
• Whipped cream
• Sprinkles
• Birthday candle
Directions:
1. Heat up 3 Aunt Jemima Frozen Confetti Pancakes and stack one on top of another
2. Decorate edge of top pancake with whipped cream
3. Add pieces of sliced orange on top of whipped cream – approximately ½ inch apart
4. Add a dollop of whipped cream to the center of the top pancake and top with strawberry slices
5. Add sprinkles
6. Place the finishing touches on your creation by adding a candle to the center of the top pancake
7. Make a wish!

My daughter is entering her first year in graduate school and really enjoys baking when not in class studying her cello. A new mix would be great to have.
