A reader reader recently asked Mindy for her meatloaf recipe and since I just tried a new one last week and Mindy is taking a short break from blogging to get acquainted with the newest addition to their family (a brand new baby boy!) I thought I’d share.
It comes from the Kraft Food & Family magazine- “Meat Loaf Minis”
Prep: 10 mins Total: 45 mins Makes 6 servings, 2 meatloaves each
Ingredients:
1lb extra lean ground beef
1 16 oz package stuffing mix
1 cup water
3/4 cup cheese
Directions:
Heat oven to 375 degrees. Mix meat stuffing, water and add-in (see options below). Press into 12 muffin cups sprayed with cooking spray. Make an indentation in the center of each meatloaf with spoon; fill with sauce (see options below). Bake 30 minutes or until cooked through. Top with cheese; continue baking 5 minutes or until cheese is melted.
Option 1: American Style. ADD-IN: 1 tsp garlic powder SAUCE: 3/4 cup BBQ sauce
Option 2: Italian Style. ADD-IN: 1 tsp italian seasoning SAUCE: 3/4 cup spaghetti sauce
Option 3: Mexican Style ADD-IN 2 tsp chili powder SAUCE: 3/4 cup salsa
I was a little frazzled the night I made these and my toddler was throwing a fit while I was trying to get dinner in the oven. I accidently mixed in the sauce instead of putting it in the indentation. They came out fine, if slightly mushy and difficult to tell if they were done. Still, they tasted pretty good. We tried the American Style. I imagine these would be really easy to make up and freeze and I plan on making a batch to have on hand after the baby is born.
