The first time I tried these spiced nuts I was hooked. They’re really easy to make too and you probably have all of the ingredients in your cupboard already, aside from the nuts. I used unsalted mixed nuts from Costco (Kirkland brand I believe) which I really like because it includes pistachios where as most other mixed nuts brands do not.
Spiced Nuts
2 Cups mixed nuts
2 T butter
1/4 Cup Light Brown Sugar
1 1/2 T water
3/4 Teaspoon Cayenne
1/2 Teaspoon Cinnamon
1/4 Teaspoon Ground Cumin
1 Teaspoon Salt
Directions
Mix the spices and sugar in a small bowl and set aside. Toast the nuts in a dry skillet stirring frequently for about 4 minutes. Be careful not to burn them! Transfer the nuts to a bowl and set aside. Add all of the other ingredients to the hot skillet and heat until a glaze forms. Add the nuts and toss until coated and continue to cook 1-2 minutes. Put the glazed nuts onto a baking sheet lined with foil and separate the nuts with a fork. Let rest about 10 minutes until the sugar has hardened. If the nuts are too sticky you can bake them for a few minutes or toss them with some sugar. Store them in a Rubbermaid container with a lid.
Warning: These nuts are addicting!
