I didn’t write down any New Year’s Resolutions or draw up a budget plan. Still, I have an informal list in my head of things I’d like to do or accomplish and a savings goal in mind. Right now though I feel like I have enough pressure and I struggle to keep up with daily tasks without adding anything else to my plate. That being said, I still try to squeeze things in when I can. My husband is wanting to eat healthier smaller portions and I’m wanting to add new meals into our rotation. I found a recipe from Stockpiling Moms and altered it to make it quick and easy. (You can find the original slow cooker recipe here) Me? I had dinner on the table in 5 minutes:
1 Large can of chicken
1/2 packet of ranch seasoning
Frank’s Red Buffalo sauce to taste
Whole wheat buns
Mix ingredients. Open buns and place on a cookie sheet. Top bottom buns with chicken. Stick under the broiler until warm.
They say to use smaller plates to give you the illusion that you are eating more when you have a full plate. Apparently I need smaller plates as this looks like a meal for a mouse to me! I served them with celery sticks and a little bit of ranch dip.
