Each week Dinner @ 6 will highlight a recipe using just 6 ingredients that was submitted by a reader. This week’s recipe was submitted by Jodi:
Quick Carmel Popcorn
4 Quarts freshly popped Popcorn
1/2 stick butter
1/2 cup Brown Sugar
4 ounces light corn syrup
1/2 cup dry roasted peanuts
3 Tbs vanilla
Melt butter in saucepan, slowly add brown sugar, stirring constantly to make a brown sugar rue. Heat on high , avoid burning by constantly stirring. Add corn syrup,vanilla and peanuts. Continue on high heat for 3-5 minutes, stirring constantly. Pour over fresh popcorn in very large bowl. Stir to thoroughly coat popcorn.
While this recipe sounds delicious, I wouldn’t recommend serving it for dinner 😉 Not all recipes in this weekly feature will be a main dish.
