Don’t Forget The Coca-Cola #Giveaway

Coca-Cola is a household name and a staple at many parties and festivities.  Coca-Cola has launched Cooking with Coke – a site dedicated to Coke-loving moms and families. The new site provides a place to share recipes, family stories and mealtime traditions.  Do you remember when Coca-Cola came in glass bottles instead of plastic?  I sure do!  (Yes, I am showing my age!)  Visitors to the site can build a personalized recipe book from any they like and share tips on how to get the whole family together.

One of my favorite meals is Cola Chicken.  I have talked about it many times before.  I recently received a pressure cooker though and wanted to see if there was another recipe I could try using Coca-Cola and a T-fal Pressure Cooker.  I found a Coca-Cola Chicken recipe that put a spin on my classic recipe from Pressure Cooker Centre.

Coca-Cola Chicken

Ingredients:
4  Chicken legs
1  lge finely chopped onion
1  tbsp Balsamic Vinegar
1  sm chopped Chilli
500ml Coca Cola
2  tbsp Olive Oil
Salt & Pepper

Directions:
1.  Heat the oil in the cooker, add chicken pieces and brown well.
2.  Remove the chicken, and brown onion in juices.
3.  Add balsamic vinegar, chilli and Coca Cola.
4.  Return chicken to pot, season to taste, close the pressure cooker and bring to pressure. Cook for 10 min.
5.  Release the pressure and remove the lid.

This recipe takes only 10 minutes and is super yummy!
