Here is one of my favorite home style recipes that I like to make on a rainy day:
Chicken Pot Pie
2-3 boneless skinless cooked chicken breasts (I boil mine and cut it up with kitchen scissors)
Ingredients:
1/3 Cup Margarine
1/3 Cup Flour
Onion
Salt & Pepper to Taste
1 Can Chicken Broth (1 3/4 Cup)
2/3 Cup Milk
1 Bag Frozen Mixed Veggies
4 Cut and Peeled Potatoes (if I used red potatoes I leave the skins on)
1 Can Small Biscuits (or bisquick)
Directions:
Cook Chicken, set aside
Melt margarine, blend in flour, then add onion, salt and pepper. Cook over low heat until it bubbles. Remove from heat.
Stir in chicken broth and milk. Return to heat and bring to a boil stirring constantly. Mixture will thicken.
Add meat, frozen veggies and cut potatoes, stirring between each.
Put in a baking dish and bake at 425 degrees until potatoes are done (about an hour)
Add biscuits and bake until light brown. If using bisquick, mix according to box and drop in spoonfuls on top.
