I love trying new recipes when I have time. For the past year or so I’ve been using my Instant Pot on a regular basis and many of the recipes have been added to our regular rotation. I love using the Instant Pot because it’s so fast and easy to use. Getting meals on the table in record time is my jam. With three kids in sports we typically have practices every day of the week. I usually have about an hour to get dinner on the table while getting them ready for practice leaving just enough time to scarf it down. It’s not our ideal dinner time but we do what we have to!
I was really excited when I received the Family Meals from Scratch In Your Instant Pot cookbook. Honestly, I’m not a big cookbook user. Most cookbooks have very few recipes our family would enjoy and I hate keeping them around for one or two recipes. This cookbook has many, many recipes that I know will be a hit and I can’t wait to try them!
Written by a busy mom of five kids under eight years old, Lisa Burns, founder of This Pilgrim Life knows what it takes to satisfy a family while juggling a hectic schedule. She really hits the nail on the head with this collection of quick, easy and nutritious family-friendly meals.
There’s no shortage of options either because Lisa offers recipes for meals including breakfast, lunch, dinner, snack time and dessert! Every recipe is made from real food, no processed ingredients, and packed with nutrients. Lisa includes recipes for healthier, homemade versions of all your favorites including Simple Egg Drop Soup and One-Pot Chicken Marsala Pasta. Her desserts range from Late-Night Fudgy Brownies to Georgia Peach Cobbler and include only all-natural sweeteners. I love the way the cookbook is organized too! Chapters include:

Most of these are pretty self explanatory. The From Scratch Essentials is a pretty important chapter though. These are things that can be made in your Instant Pot and used in a variety of different recipes, many of which are found in this book. For example, the Big Batch Chicken Broth recipes is used in several recipes throughout the cookbook. You can of course use an alternative but this is a great recipe and likely healthier than store bought broth. The Perfect Thick & Creamy Yogurt is also used in many dishes or can be eaten on it’s own. I highly recommend this one because it’s so versatile!
Every recipe in this cookbook is accompanied by an author’s note as well as a beautiful photo of the dish. I’ve already bookmarked quite a few recipes that I want to try once school is out and I have a little more time to prepare my shopping list. I know this is going to be one of my go-to cookbooks — definitely a keeper!
