Guess what I made last night for the first time? Fresh Pico De Gallo! It’s my hubby’s favorite and he’s been looking for healthy snacks. This one certainly fits the bill! Tomatoes are loaded with health benefits and if you can chop veggies, you can make this recipe! It’s so easy!
Ingredients:
- 3 Roma Tomatoes
- 1 Lime
- 1/2 Red Onion
- 1/2 bunch cilantro (leaves only)
- 2 tsp salt
Directions:
Finely dice tomatoes, onion and cilantro. Add salt. Squeeze the juice from a whole lime onto everything. Mix well to combine then refrigerate. Serve with tortilla chips for a yummy snack or add to tacos, fajitas, etc.
