My husband is the breakfast guy. I’m not a morning person at all so I rarely leave enough time to make a hot meal for my kids before sending them off to school. The Hubs usually makes breakfast on weekends or for dinner on weeknights. Breakfast foods aren’t really my thing either but the other morning at my MOPS meeting I tried an egg dish that I really loved. I got the recipe from the mom mentor that made it so I could try it out myself.
With a little help from my darling assistant, I made “A Touch of Mexican” egg dish. Forget breakfast, dinner or even brunch. We made a full-on breakfast for LUNCH and enjoyed it around 1 pm with a side of Jennie-O Turkey Bacon, Jennie-O Turkey Sausage and some toast.
And it was delicious. The turkey sausage was really flavorful and was easily passed off as regular sausage to my son. The bacon is a little less convincing. The texture is different but it still tastes good. From a health standpoint, this bacon is a lot healthier! Good for you breakfasts don’t have to be spendy either.
