Strawberry Shortcake is a dessert that has been around for centuries. It even has it’s own day. How will YOU celebrate Strawberry Shortcake Day on June 14th? I love traditional strawberry short cake but I wanted to switch it up a little. You can’t go wrong with chocolate, right? I also have an amazing coconut syrup recipe so I decided to combine them all together to make a Strawberry Coconut Chocolate Shortcake.
To make this delicious dessert you’ll combine two recipes:
While your brownies are baking, cook up your coconut syrup and sliced & sugar your strawberries. I highly recommend Driscoll’s strawberries. The ones I bought were absolutely beautiful. I couldn’t find a more perfect box of strawberries. Each and every one was perfectly red, ripe and delicious. I couldn’t help but eat a few as I sliced them up! Slice them any way you like and add a little bit of sugar to them. When your brownies are done and have cooled, use a round cookie cutter to cut a circular portion of brownie. Drizzle with coconut syrup then add your berries. Top with whipped cream and shredded coconut.
