This is a recipe from my late grandma. She never used measurements, but she managed to somehow give us some before she passed. It is such a favorite throughout our whole family and feeds a lot! (of course, I always double or triple the recipe hehe)
Ingredients:
1 chicken hen
1 c. flour
1 egg
1/2 eggshell of milk (told you she never measured haha)
1 tsp. water
some salt and pepper for taste
Directions:
Cover the chicken with water and boil (usually takes me about an hour). In the meantime, mix the rest of your ingredients. Sometimes I have to add a tad more water. Roll out using flour on the surface you are rolling out on (can be very sticky). Cut the dough into small noodles (usually about an inch tall and real thin). The chicken is finished when it is falling off the bone. Pull the chicken out to cool and strain the broth. Re-boil the broth and add the chicken and noodles. You may want to add a bouillon or two depending on taste. We always add yellow food coloring too just because that’s how my grandma always did it. Cook until the noodles are soft and the broth thickens. You can eat it as “soup,” but we always thought it was best when it was thick.
*I make the noodles the night before a lot of times and put them in the fridge because it can take awhile to cut the noodles depending on how many you make.
