Oh my! I forgot about Weigh Me Wednesday last week with how busy everything was trying to prepare for Thanksgiving. So, I started my 2 week appointments only because my Dr. wanted to watch my weight. I only gained 1 lb. in 2 weeks which included Thanksgiving, so I was definitely very surprised to see that. I equate it to the fact that my husband was gone for a week and I had been sick. Oh well. At least there is no special diet for me this week. 🙂
Thank you all for your kind words last week. We really do have the best readers! I have to give a shout out to Sherry who lost over 80 lbs. and is still going! That is SO awesome!!!!
This week’s recipe is an alternative to “regular” tacos:
Turkey Taco Lettuce Wraps
Ingredients:
•1.3 lbs 99% lean ground turkey
•1 tsp garlic powder
•1 tsp cumin
•1 tsp salt
•1 tsp chili powder
•1 tsp paprika
•1/2 tsp oregano
•1/2 small onion, minced
•2 tbsp bell pepper, minced
•3/4 cup water
•1/2 8 oz can tomato sauce
•8 large lettuce leaves from Iceberg lettuce
Directions:
Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.
Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer.
