At least this Weigh Me Wednesday won’t be so mundane as it could be with the typical announcement that I’ve gained a pound. We had another ultrasound (typically called the first trimester screening) to tell about whether or not there is a chance for downs and other chromosomal abnormalities. We should receive our results in a week or so. The baby was measuring right at 14 weeks and I have officially guessed that it is a boy. We will see soon! He/she was definitely stubborn during the test, so the poor thing is already taking after me haha.
I was at Meijer today and had a burst of energy to where I needed to take a walk around the neighborhood. It is finally getting a little cooler out and my energy is coming back. I can’t wait to feel much more “normal.” Only 6 months left, right? Who am I kidding, 18 more years, right? 😉
This week’s recipe that I have for you is one of my family’s FAVORITES. It is SOOOO easy and cheap, but is so healthy and yummy at the same time. I kind of “wing” (no pun intended) the whole thing anymore, so this will be “old school” directions.
“Roasted” Chicken
Note about preparation: This takes an overnight marinating.
Ingredients:
Hen (size is up to you)
Paprika
Salt and Pepper to taste
Onion or onion flakes
Directions:
Night before: Clean chicken and remove any of the giblets if there are any. Pat dry with a paper towel. Rub the hen with paprika and salt/pepper. Put onion inside hen or sprinkle hen with onion flakes. Cover whole hen with plastic wrap.
Day of: Heat oven to 250 degrees. Unwrap hen from plastic wrap and place on broiler pan. Remove onion if you used one. Cook hen for 3-5 hrs. (depending on oven). You will know when the chicken is done when it starts to make your whole house smell SO yummy and it will also easily start to fall off the bone if you touch it with a fork. Serve with mashed potatoes or yummy side dish!
