If you like coconut you are going to love this recipe for coconut syrup. It’s super easy to make and tastes delicious! I’ve only eaten it on Swedish pancakes but it would make a great dessert or ice cream topping as well.
Ingredients:
1 Stick butter
1/2 cup buttermilk
1 Cup sugar
1 tsp baking soda
1 tsp coconut extract
Directions:
Boil together butter, buttermilk and sugar stirring continuously for about 5 minutes and it starts to thicken. It will look like this:
Remove from heat and stir in coconut extract and baking soda. It will still be a little frothy looking like this:
Once it cools and thickens a little it will more closely resemble a syrup.
If you need something to try this on immediately, here’s my husbands recipe for Swedish pancakes:
Ingredients:
2 Cups flour
3 Cups milk
3 Eggs
Directions:
Beat all ingredients together with an electric mixture. Cook in a hot greased pan as you would a regular pancake but pour it thin — think crepe style. I know I’m a little crazy but I want to try putting the syrup inside the rolled up pancake and drizzling the top with chocolate syrup. Yum! How would you use coconut syrup?
