I had some Jennie-O Turkey bacon to use so I made some easy breakfast biscuits. These are great for reheating on busy mornings because they freeze well. I’ve also made them with Jenny-O Turkey Sausage. I can’t decide which one I like better!
Jennie-O Turkey bacon is gluten-free and comes in a handy resealable package so you can make as much or as little as you want. I made a big batch and when it cooled I used my kitchen scissors to cut it into small pieces for my biscuit recipe:
Preheat your oven to 350 degrees, then whip these up!
First, beat 8 eggs.
Stir in 2 cups of Bisquick. (I used a store brand)
Add 2 cups of shredded cheddar cheese then stir in the bacon pieces.
Grease a muffin tin, add your mixture and bake for approximately 20 minutes. Let cool completely before freezing. These biscuits can be thawed in the microwave but we like to heat them with our air fryer. I used regular sized muffin tins and this recipe makes about 2 dozen of them.
My kids liked them and they are very filling so it’s nice to get them off to school with their bellies full and happy!
