We’ve been in a breakfast rut. I’ve been wanting to try making up a recipe ahead of time so that my mornings go smoothly and my kids get a good breakfast. These Easy Sausage Breakfast Muffins did the trick. They are fast and easy to make, freeze well and reheat well. Plus, my kids love them and they are pretty filling too! Preheat your oven to 350 degrees, then whip these up!
Start by cooking 1 pound of ground sausage.
Next, beat 8 eggs.
Stir in 2 cups of Bisquick. (I used a store brand)
Add 2 cups of shredded cheddar cheese then stir in the sausage.
Grease a muffin tin, add your mixture and bake for approximately 20 minutes. Let cool completely before freezing. These biscuits can be thawed in the microwave but we like to heat them with our air fryer. I used regular sized muffin tins this time but next time I might use the mini muffin size. My kids are 8, 6 and 5 and only my oldest finished his. They all said they were full, and I actually believed them because they liked these! This recipe makes about 2 dozen regular sized muffins.
