Everyone can use a little extra motivation, especially on Monday, right? This new series is designed to motivate you in different areas of your life whether it be trying a new recipe, organizing an area of your home or testing out a new cleaning tip. I’ll be giving you my take on the assignment and hopefully inspire you to try it out yourself!
Did you resolve to eat more veggies in 2015? I’m not very good about setting solid goals and sticking to them but I did have this nagging in the back of my head saying “eat your veggies!” So I have a very vague resolution to get more vegetables in my diet. I’m not sacrificing anything getting them in either. If it means consuming them with cheese and bacon, that’s cool with me.
I generally like broccoli but normally prefer it cooked. That is until I tried a broccoli salad at a Halloween party last October. It was so good I had to have the recipe. I just asked for it a couple of weeks ago. That’s how good the salad was. I was still thinking about it months later. Luckily, my friend was happy to share “Mom Smalley’s Broccoli Salad Recipe” with me and I actually had the ingredients (or substitutions) on hand except for the broccoli.
Mom Smalley’s recipe calls for:
- 1 large bunch fresh broccoli
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 10 slices bacon, cooked & crumbled
- 1 small onion chopped
- 1 cup cheddar cheese, grated
Dressing:
- 1 cup mayonnaise
- 2 Tbsp vinegar
- 1/4 cup sugar
I substituted SuperSeedz Pumpkin Seeds for the sunflower seeds and at the suggestion of my friend when I mentioned I hated chopping onions, I replaced the fresh onion for 1/2 teaspoon onion powder. I also cheated and used store bought bacon bits. I’m lazy like that.
Directions:
Chop broccoli into small pieces. Mix with the raisins, cheese, nuts, bacon and onion. Mix together the dressing ingredients then combine with everything else. Super easy and SO delicious! Trust me, you’ll love eating your broccoli!
It may be debatable, but I’m going to call this recipe healthy since it’s main ingredient is a dark green vegetable. 🙂

I have made this before and it is one of my all-time favorite ways to use broccoli. I have used dried cranberries and sunflower seeds, peanuts as well as cubed apples. I love it! But I think that real bacon is really the way to go.
