SocialMoms and Coca-Cola® have teamed up to introduce a new blogging program asking us to share a classic family recipe or fond family memory inspired by memories of Coca-Cola and mealtime. I grew up only knowing Coca-Cola. I have a funny story actually that I’ll never forget. When I was young, Coca-Cola came in bottles only. My mom and I were at the grocery store and she actually dropped some of the bottles and somehow cut her wrist. To this day, she still has the scar and it’s a story that will be tied to it forever. I’ll never forget it either. Accidents happen and they sure have come a long way where it’s actually hard to find glass bottled C0ca-Cola!
Since I have lot all of my baby weight, my family and I have adapted to an awesome chicken recipe that you may have heard me discussing. The name of the recipe is even called Cola Chicken. It’s super easy to make and is healthy all in one!
Cola Chicken
Ingredients:
1 c. ketchup
1 can of Coca-Cola (can use diet too to make it even healthier)
4 pieces of chicken breast
Turn your stove on medium-high. Put chicken in skillet. Add cola and ketchup. Once it starts bubbling, turn your temperature down to medium-low. Cook for about 45 minutes. Don’t overcook or your chicken will be hard and dry. I usually just eyeball when I believe it’s done by how thick the sauce is. I serve it with mashed potatoes. The sauce will thicken towards the end also.
My children are picky about eating chicken, but when I make this, they think it’s great and don’t care to eat it! They are still too young to enjoy a nice Coca-Cola at dinner with their meals, but I know it’s something I definitely love! What are some of your family recipes or memories inspired by Coca-Cola?
