Diabetes runs in my family. Luckily, I don’t have any signs of it yet but it never hurts to be prepared. Besides, cutting down on sugar is never a bad thing! I love cooking with my Instant Pot so when I saw the Instant Pot Diabetes Cookbook I was curious to check it out!

I was delighted to see such a variety of unique options to really switch up my family’s meal plan. Author, recipe developer and food consultant Nancy S. Hughes makes it easy to eat right with her simple diabetes friendly recipes in this book.
If there’s one meal my family always loves, it’s breakfast weather we eat it in the morning or for dinner! The Custard Cup Frittatas recipe caught my eye immediately. There are 90 recipes in this book but not all of them are photographed. I love seeing the finished result beforehand and this is one of the recipes that included a photo.
This recipe is easy to follow and makes a great and filling meal. I love the cook’s notes on each recipe that offer pointers to make things even easier! Whether you’re looking for weeknight meals or something for larger, social gatherings, you’ll find classics and refreshing new recipes that deliver great flavor without a lot of effort and take the guesswork out of keeping meals diabetes friendly.
