I know I’ve mentioned several times that dinner can be a challenge for me, but it really is! My dinner time I often feel completely overwhelmed. The kids are cranky and uncooperative (and WON’T.STAY.OUT.OF.THE.KITCHEN.) which can be very distracting when trying to cook a meal. Minute Steamers give me a dish I can just stick in the microwave and not have to worry about giving any attention to it while I keep one eye on my kids who are emptying cupboards, playing in the sink and dragging items out of the fridge and the other eye on preparing the main dish. Better yet, Minute Steamers can become the main dish with a little bit of doctoring!

South-of-the-Border Turkey Dinner
Ingredients:
- 1 bag Minute® Steamers Brown Rice
- 1 pound ground turkey, cooked and crumbled
- 1 can (11 ounces) southwestern corn blend
- 1 cup prepared salsa
Directions:
- Prepare rice according to package directions.
- In a medium microwave-safe bowl, combine turkey, corn and salsa.
- Cook on HIGH 2 minutes.
- Stir in rice.
Tips:
- Add 1 cup shredded Monterey Jack cheese.
- Use as filling in tortillas and top with shredded lettuce and chopped tomatoes.
- Roll into burrito-sized tortillas and serve with sour cream
Minute Steamers are available at grocery stores nationwide including Walmart. These must be hugely popular because my Walmart only had a single loan bag hidden way in the back on the top shelf. I had to stand on my tippy toes to get it! After trying the Fried Rice variety, I can see why they were sold out! It was really good! I heated it up for lunch one day and was expecting it to be bland. I started to reach for the soy sauce but figured I better give it a try first. It was perfectly seasoned and delicious! I could easily add some chicken or pork and serve it with an egg roll for dinner and my family would be thrilled!
