My sister-in-law gave me this recipe at the beginning of summer and I’ve been waiting until fall to try it. I need to pick up some ingredients first but I’ve taken her word that it’s delicious and decided to share it here even before I’ve tested it myself! 🙂

Pumpkin Dessert
1 yellow cake mix
1 large can pumpkin
1 small can evaporated milk
3 eggs, beaten
1 c. sugar
2 tsp. pumpkin pie spice
1/2 tsp. salt
1 1/2 cubes butter
Beat eggs. Add sugar, evaporated milk, pumpkin, spices, and salt and mix together. Put in greased 9×13 inch pan. Sprinkle dry cake mix on top. Cut up the butter and dot on top of cake mix. Bake at 350 for about an hour or until the center is set.

Pumpkin is very versatile and the spices are so yummy. I make a pumpkin pudding and pumpkin chocolate chip cookies.
I even went out of my way to buy jars of pumpkin baby food for my daughter (only available at WalMart in my area).
