Statistics show that Mexican is one of the most popular cuisines consumed by Americans. I know it’s a favorite in our family. In fact, we usually have tacos once a week. There are so many different ways to fix tacos. My husband prefers his on fried corn tortillas with onions, cheese and ketchup. Yes, he’s a weirdo. I call that a cheeseburger taco. But since we are trying to eat healthier, we were thrilled to try an Ortega Whole Grain taco kit. Since the kit came with whole grain corn taco and wheat soft tacos, we made double decker tacos. We used the low sodium seasoning packet that came with the kit to season ground turkey. We spread the soft taco with some refried beans then stuck a hard shell in the middle, filled it with meat, cheese and lettuce. The kit also came with taco sauce which we didn’t try because none of us care much for taco sauce (like I said, the Hubs uses ketchup). I have to say, we really enjoyed this kit and were happy to have one of our favorite meals with a healthier spin. I actually thought the whole grain tacos added more flavor and really liked them! Having everything together in a kit was really handy too. Plus, the tacos are excellent source of fiber and whole grains.
