1 lb chicken- cooked; shredded (I like to boil mine, keeps it moist)
2 cups water
1 cup mild salsa
1 taco seasoning packet
2 cups uncooked instant rice
8-12 flour tortillas
Directions:
In a skillet, combine chicken, water, salsa and seasoning. Bring to a boil. Add rice. Simmer for 5 minutes. Put some of the mixture in a tortialla. Add some sour cream and cheese if desired.
This recipe makes a lot. I found the making up the leftovers and freezing them works well. They are easy to grab and heat up for lunch.

I know Holly wrote this post and not me, but I can respond on boiling the chicken. Boiling a chicken usually takes about an hour. I always just judge mine by look. You’ll know when it’s done when it just falls of the bone. Makes GREAT chicken that way! I would say about an hour though give or take.

Anon- I use boneless skinless chicken breasts and boil them for maybe 10-15 minutes I’m guessing. I cut them open in the middle to make sure they are done and then shred them with a fork. Sometimes I cut the chicken into chunks using tongs and kitchen scissors instead.
