Schwan’s Spring Recipes Review & #Giveaway

 

 

When I think of Schwan’s I think of quick pre-made meals I can just heat up that taste fantastic.  Schwan’s products can also be used as ingredients!  They sent me a couple of recipes and products to go along with them.  They were easy to prepare and made me feel like a chef, producing a great meal.  I could totally serve these to guests!

SCALLOPS WITH LEMON WINE SAUCE AND PASTA

Prep Time: 5 min | Total Time: 22 min | Serves 4

Ingredients:

12 SCHWAN’S® Scallop Sautés (532), frozen

2 Tbsp butter

2 tsp minced garlic

½ cup diced tomatoes

½ cup white wine

2 Tbsp lemon juice

1 lb angel hair pasta, prepared

2 Tbsp chopped parsley

• Add scallops to fry pan and cook over medium-high heat 10-12 minutes, turning over once until golden on each side.
• Remove scallops from pan and set aside. Stir in butter, garlic and tomatoes and cook over medium heat 2 minutes.
• Add wine and lemon juice, continue to cook 3-5 minutes or until liquid has reduced to half.
• Toss sauce with pasta and scallops. Garnish with parsley and serve.
• Tip: Garnish with shredded Parmesan

 

TORTELLINI SALAD WITH CRANBERRY, FETA AND GREENS

Prep Time: 10 min | Total Time: 10 min | Serves 4-6

Ingredients:

3 cups fresh salad greens

¾ cup dried cranberries

4 oz crumbled feta cheese

¼ cup toasted, chopped pecans

¼ bag LIVESMART™ Six Cheese Tortellini (846), prepared

¼ cup thinly sliced red onions

¼ cup raspberry vinaigrette dressing

• Toss all ingredients together and serve.
• Tip: Add grilled LIVESMART™ Boneless Skinless Chicken Breasts (407) for a complete meal.

Our family especially enjoyed the tortellini recipe.  Since my kids aren’t big salad eaters it was easy for me to cook up some extra tortelli and serve it to them with grilled chicken without having to really make a separate meal for them.  I had never thought of using tortellini in a green salad before but have to say, it was REALLY good.  I didn’t use the Schwan’s chicken — I just grilled up a few tenderloins on our George Forman grill and it worked out perfectly.  What I had on hand is very similar to the Schwan’s product.  Having the tortellini and chicken beefed up the salad making it into a filling dinner.
