Easter eggs everywhere! I am going to start clucking! Have you been wondering what to do with all of those leftover Easter eggs? Here are some tips:
–Deviled eggs. We took ours to my in-laws and made deviled eggs out of them. We had so many that some of them even came home with us. Here’s a great recipe:
6 hard-boiled eggs, cut length-wise
1/4 cup Light Mayonnaise or Salad Dressing
1/2 teaspoon dry ground mustard
1/2 teaspoon white vinegar
Salt and Pepper for Taste
Paprika to top them off
Remove the egg yolks and place in a small bowl to mash with a fork. Add rest of the ingredients except the Paprika. Fill the empty egg white shells with the mixture and sprinkle lightly with paprika.
-Potato Salad. This is always a hit!
5 potatoes
3 hardboiled eggs chopped
1 cup chopped celery
1/2 cup chopped onion
1/2 cup sweet pickle relish
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1 tablespoon prepared mustard
1/4 cup mayonnaise
ground black pepper to taste
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop. In a large bowl, combine potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix well and refrigerate until chilled.
-Eat them for breakfast! I LOVE hard boiled eggs in the morning for my breakfast. I can down 2-3 of them as my meal and it’s a great source of protein.
-Add them to salad. My husband and I took some and added them to our salads. Throw in a little meat, croutons, lettuce, dressing and you’re good to go!
Since it’s been almost a week now after Easter, any hard boiled eggs should be tossed after 7 days.
