
You could use any type of pancake mix but this Spiced Pan Pumpkin Mix is perfect for the season. Just add milk, butter, and eggs. The Pancake Pen is pretty awesome, especially with the Pancake Molds but with this batter, small chunks of pecans sometimes get stuck in the tip. I had a bit of a hard time releasing the pancakes from the molds when it was time to turn them but I forgot to spray them with cooking oil first and probably didn’t wait long enough before turning them. It probably would have helped to read the directions first. We had pancakes for dinner and they were a hit with the whole family. They would have been over the top scrumptious with whipping cream on top but we didn’t have any. Maybe next time!
