Have you ever purchased meat in bulk? I’m not talking Costco sized stuff, but BIGGER. I’ve heard of people buying things like “half a cow” and it sort of grosses me out a little. I admit, I’m not big on cooking meat. We eat a lot of chicken at our house and it mainly comes in the frozen boneless skinless variety from Costco. I was recently offered 40 lbs of FRESH boneless chicken from a local company to try out and since we eat so much chicken and I had been wanting to do some bulk type cooking, I couldn’t let the opportunity pass me by. One of the benefits of buying meat in bulk is the savings- you’ll get a smaller price per pound than you would if purchasing a smaller portion. Does $1.48/lb for boneless skinless chicken breast sound good? If you live Northwest you can get your hands on some!

As previously mentioned, I was given a case of chicken (40 lbs!) for our family to try. They graciously delivered it right to our door. I have to admit that while I knew they would be delivering it, I wasn’t as prepared to handle such a large amount of meat. I was already past my due date with my third child and running low on energy and patience but I didn’t want to pass up this great opportunity.
4-8 cloves garlic (or jarred equivalent)
red pepper flakes (can be left out if you aren’t a fan of spicy foods)
4 oz cream cheese
1.5 Tbs. flour
2 tsp white wine
We like this over chicken and white rice. It’s also good for a white garlic chicken pizza!
1/4 tsp. ginger
3/4 tsp red pepper flakes (omit if you don’t care for spicy foods)
1/4 cup apple juice
1/3 cup light brown sugar
2 Tbs ketchup
1 Tbs cider vinegar
1/2 cup water
1/3 cup soy sauce
- 2/3 Cup Brown Sugar, firmly packed
- 2/3 Cup Pineapple Juice ( or Orange juice)
- 1/4 Cup White Vinegar
- 1 Tablespoon catsup ( ketchup)
- 1 Teaspoon soy sauce
- 2 Tablespoon corn starch
- 1/4 cup water
In a saucepan bring the first 5 ingredients to a boil over medium heat, stir so it does not burn. Thicken with Cornstarch diluted with water, cook one more minute. Take off heat. Voila!

Wow – that’s a lot of chicken to deal with at one time. I love your idea about getting the different menu items (teriyaki, etc) ready to go right off the bat! I’d never thought of that. I’ve just been separating into meal sized portions and freezing that way. But then, I still have all the recipe prep when I want a meal! Great idea!

Our favorite chicken dish is Chicken Alberto with Crimini Ravioli dressed with a creamy Sun Dried Tomato Sauce. Yumm-O! 🙂
(40lbs would be a great opportunity to experiment in making this gluten free for our daughter, who has not been able to enjoy this dish for 8yrs!)
