What do you think of when you thing of “comfort food”? Mac & cheese? Pizza? Fried chicken? These days the way people are thinking about comfort foods are changing. Healthier options are becoming the new comfort foods. In our household, pizza is our go-to comfort food. I’ve starting making homemade pizza with fresh ingredients to substitute delivery or take out. Instead of pepperoni, we are opting for chicken or veggies.
Healthier Ingredients
The other night I made a Pesto Chicken pizza with Foster Farms Simply Raised Thin-Sliced Breast fillets:
This locally raised boneless, skinless chicken has no added hormones, steroids or antibiotics. The chicken is fed a 100% vegetarian diet and is American Humane Certified. It’s always fresh and 100% natural. It’s also 98% fat free! It grills up great and can be used to make all sorts of comfort foods to make them healthier.
I seasoned the chicken and grilled it on our George Forman Grill, then sliced it for our pizza. I used this homemade pizza dough recipe that is super easy. It’s freezable so I usually make extra for future meals to cut down on prep time.
I recently discovered that I love pesto so I tried my hand at making fresh pesto sauce. I was surprised how easy it was and it tasted delicious! I used this for the base of my pizza instead of a red sauce. For toppings, I used fresh mozzarella and olives to go along with the chicken. Next time I want to add spinach for another healthy boost.
