I’ll admit, I’m a somewhat picky eater. Even though I’m in my late 30’s I feel like I am still venturing out of my childhood dislikes and trying new foods and I’ve discovered eating is a lot more fun when you discover that you actually like things like pesto! Thanks to MOD pizza, this new found love inspired me to try my hand at making it homemade. It’s easier than I thought it would be!
Gather your ingredients:
2 Cups Fresh Basil
1/2 Cup Grated Parmesan Cheese
1/3 Cup Pine Nuts
3 Cloves Garlic
1/2 cup Extra Virgin Olive Oil
Salt & Pepper to taste
I don’t have a food processor which is probably your best bet but my Ninja got the job done.
DIRECTIONS
- Pulse the basil leaves and pine nuts together.
- Add garlic and cheese and pulse those together. Scrape down the sides as needed with a spatula
- Add olive oil and blend until combined
- Stir in salt and pepper to taste
- Enjoy!
I was quite please with how easy this homemade pesto was to make and it tasted great! I used it as a replacement for pizza sauce but had a lot left over. Now I want to try it tossed with pasta! There are lots of ways to use pesto. How do YOU use it?
