This recipe is from the book The Dinner Doctor which has LOTS of yummy and easy recipes.
Mexican Lasagna
cooking spray
1 lb ground beef
6 10″ corn tortillas
1 can fat free refried beans
1 cup sour cream
1 8 oz package or 2 1/2 cups mexican style shredded cheese
1 12 oz jar of salsa
Preheat oven to 400 degrees. Cook beef; drain. Add 1/2 cup salsa. Spread remaining salsa in the bottom of a 10″ pie pan. Top with 3 tortillas. Spread 1/2 of the beans then half the beef then 1/2 cup of sour cream then 1 cup cheese. Top with 3 tortillas & repeat ending with all but 1/2 cup cheese.
Cover loosely with foil and bake 20-25 minutes until hot and cheese has melted. Remove from oven and let rest for 5 minutes. Garnish with remaining cheese. Serves 6-8.
This is a great make ahead recipe. Just use an aluminum pie tin & freeze!
