

My hubby’s birthday was this week. I always make him a dessert to celebrate. He loves ice cream cake but I had never made one before. It was really quite easy! We mixed heavy whipping cream, milk, sugar and the cake mix together with an electric mixer. We used a zig zag and up and down motion to make the mix “fluffy”. It almost double in size! Then we poured it into a spring form cake pan and put it in the freezer for 4-6 hours. You can make a crust if you like, add multiple layers, mix in different ingredients and more but we kept it pretty simply.
We frosted the cake with store bought frosting (the coconut type used for German Chocolate cakes) and whipped cream from a can. We wrote “Happy Birthday Dad” with a frosting bag then drizzled the edge with chocolate.
