This year I resolved to eat more veggies, “move” more and cut back on sugar. So far, I think I’ve done pretty well! I’ve even started running! My downfall is when it comes to cravings. I’ve found a pretty good alternative when it comes to my salty cravings — Pickles! One pickle spear even counts as approximately 1/4 of vegetables!
I love keeping Vlassic whole dill pickles and dill spears in the fridge for when cravings strike. If your cravings lean more towards sweet or spicy, Vlassic has a variety of pickles to choose from including Bold & Spicy, Sweet Chipotle and Sweet Gherkins. All of the pickes are low in calories — less than 30 calories per serving. The Dill Pickles are ZERO calorie snack — ZERO!! Amazing, right? Pickles are also zero fat and low carb.
Did you know pickles are high in probiotics and contain antioxidants? These both promote good health. Next time you’re craving potato chips, try the great crunch of a pickle instead.
To mix it up, I created my own healthy version of “Fried Pickles”:
Start with whole dill pickles or dill spears and slice them into small wedges. Mix together the following ingredients:
1 cup bread crumbs
1 tsp salt
2 tsp black pepper
2 Tbsp olive oil
Beat together 3 eggs.
Dip each pickle spear into the eggs then coat in the bread crumb mixture. I used our Air Fryer to cook the pickles to perfection but you should be able to bake them in the oven pretty easily. If you aren’t concerned about fat, these would also be awesome deep fried!
I made a double batch and took them to a Super Bowl party to share.
They were a hit and I definitely plan on making them again. Maybe next time I’ll make some sort of dipping sauce to go with them but honestly, they were pretty good just by themselves. The black pepper gives them a kick and really hits the spot.
